Course grind Goose/Duck meat, mix with 30% course ground pork fat.

Mix thoroughly with SWRR sausage seasoning (I’d recommend Sufferin’ Sweet/Hot Italian Sausage Seasoning).

Package and refrigerate for 2 days prior to freezing or cooking (for fresh sausage).
